Coconuty Perch

Recipe Description
INGREDIENTS:
1/2 cup apricot preserves
1/4 cup ketchup
1/4 cup light corn syrup
2tbsp. lemon juice
1/4tsp. ground Ginger two cups crushed butter flavor to crackers (about 50 crackers)
one cup flaked coconut
two eggs
1/2tsp. salt
2tbsp. of evaporated milk
3lbs. perch filets
one cup vegetable oil, divided


COOKING INSTRUCTIONS:
for sweet-sour sauce combine the first five ingredients in a small saucepan.

bring to a boil.

Reduce heat; simmer, uncovered, for five minutes or until slightly thickened.

remove from the heat and keep warm.

In a shallow dish, combine the cracker crumbs and coconut.

In another shell a dish, whisk and the eggs, milk and salt.

Dip each filet a and egg mixture, then coat with the crumb mixture.

In a large skillet, cook fish in 3tbsp. oil in batches over medium high heat for one to two minutes on each side or until fish flakes easily with a fork, adding well as needed.


SERVING SUGGESTIONS:
Serve with sweet-sour sauce.
