Crispy and Spicy Fillets
Recipe Description
INGREDIENTS: 2 cups all-purpose flour 3 teaspoons salt 2 teaspoons Cajun seasoning 1-1/2 teaspoons pepper 1/8 teaspoon ground cinnamon 2 pounds bluegill, bass or crappie fillets 2 eggs 1/4 cup water 2 cups mashed potatoe flakes 6 teaspoons vegetable oil, divided COOKING INSTRUCTIONS: In a large plastic zip-lock bag combine the first 5 ingredients. Add fish, one pieced at a time and shake to coat. Whisk eggs and water in a bowl. Place potatoe flakes in another shallow bowl.
Dip each coated fillet into the egg mixture, then coat in potatoe flake, repeat with each fillet twice.
In a large skillet, heat 3 tablespoons oil over medium-high heat. Cook fish in batches for 3-4 minutes on each side or until fish flakes easily with a fork. Add oil as needed.
